A little while back I was visiting my brother in Houston and we went to a steakhouse called Houston’s. While we were waiting for a table I took this 10 minute video of the chefs working the grill and prepping the food.
These guys were serious pros, and it’s cool to watch, but you should have smelled the food! Makes my mouth water just thinking about it.
Anyway, at times when you watch the video it looks like the speed of the video has been altered. I assure you, this is real time and those guys are actually moving that fast! They had a serious assembly line going and these guys were a real team.
A few things that were interesting to note:
- The guy on the grill has a huge mop and a bucket of BBQ sauce. When he puts the sauce on the ribs it only takes one pass to get the entire rack!
- He keeps the flipper in a pan of oil. This helps keep the meat from sticking to the grill surface.
- This is a wood burning grill, not gas! He had to add some fuel occasionally to keep the heat just where he wanted it.
- He’s got a press that he uses to help sear both sides of the steak. You put it on the grill till it gets hot, then drop it on top of the meat to sear.
Oh, and at one point while we were standing there watching them (for about 30 minutes) the guy working the grill was cool enough to bring us a big basket of fries to munch on while we waited. Just a totally awesome experience.
I highly recommend dropping by for dinner if you ever find yourself in Houston, TX. Heck, they even have a 4.5 star rating at Citysearch and also on Yelp.
I love to cook, I haven’t worked in a restaurant in years but I still miss it. Thanks for the video, brings back good memories.
That is just super efficient What i hate in the UK is having to wait so long for food and they are never that busy!
Wow, I used to be a Chef. And you know what? They own me XD
Pfft…I do this in my kitchen all the time…lol just kidding. Really cool video, makes my mouth water just watching it!! I didn’t think I’d actually watch a video about steak, but I ended up watching all ten minutes of it.
I’m exhausted just from watching! How do they just keep moving and moving and moving like that? Do they do that all night? Yikes!
And I thought it was cool to watch the guys at the Jason’s Deli’s!!
